{"id":1529,"date":"2024-09-26T06:31:55","date_gmt":"2024-09-26T06:31:55","guid":{"rendered":"https:\/\/friscotimes.org\/?p=1529"},"modified":"2024-09-26T06:31:55","modified_gmt":"2024-09-26T06:31:55","slug":"anastacia_quiones-pittmans_ultimate_food_guide_to_the_state_fair_of_texas-html","status":"publish","type":"post","link":"https:\/\/friscotimes.org\/?p=1529","title":{"rendered":"Anastacia Qui\u00f1ones-Pittman\u2019s Guide to the State Fair of Texas Food Finalists 2024"},"content":{"rendered":"<p> <br \/>\n<\/p>\n<div>\n<p id=\"1MpG1Q\">State Fair season is upon us and, luckily for us, Dallas\u2019s own<a href=\"https:\/\/dallas.eater.com\/2024\/4\/3\/24119886\/james-beard-finalists-nominees-2024-dallas-dfw-fort-worth\"> James Beard-nominated chef<\/a>,<a href=\"https:\/\/dallas.eater.com\/2024\/4\/25\/24139197\/anastacia-quinones-pittman-jose-anniversary\"> Anastacia Qui\u00f1ones-Pittman<\/a> of<a href=\"http:\/\/www.jose.mx\/\"> Jose<\/a>, has taken the mantle to champion<a href=\"https:\/\/dallas.eater.com\/2024\/8\/7\/24215247\/big-tex-choice-food-finalists-state-fair-texas-2024\"> this year\u2019s deep-fried and powered sugar-dusted dishes.<\/a> In addition to being an expert on food, Qui\u00f1ones-Pittman has worked with the fair and attends every year with her husband and kids \u2014 so she has a lot of long-standing favorite fair foods. Follow along as she experiences the highs, the lows, and the fried food hangovers of this year\u2019s hottest state fair staples.<\/p>\n<h2 id=\"Gcnh0b\"><strong>Hot Chick in a Pancake Poppers<\/strong><\/h2>\n<p id=\"nB6ZeK\"><em>The inspiration<\/em><\/p>\n<p id=\"lRhYaU\">Palmer and Amanda Fortune, of<a href=\"http:\/\/www.palmershotchicken.com\/\"> Palmer\u2019s Hot Chicken<\/a> in Lakewood, took two things they are already great at, Nashville hot chicken and pimento cheese, and deep fried them. The idea came from the long-standing tradition of deep fried balls.<\/p>\n<p id=\"44aSzl\"><em>The verdict: A+<\/em><\/p>\n<p id=\"9MmpGf\">Qui\u00f1ones-Pittman (and all of us, frankly) were a bit worried when Fortune brought out an airfryer to prep the dish, but one bite of that tangy pimento cheese not only erased all our worries but prompted Qui\u00f1ones-Pittman to declare it her favorite dish among the finalists. At the end of the day, when asked again in the parking lot, she stood by that decision.<\/p>\n<h2 id=\"GOU0ct\"><strong>Rousso\u2019s Cotton Candy Bacon on a Stick<\/strong><\/h2>\n<p id=\"ANF2f3\"><em>The inspiration<\/em><\/p>\n<p id=\"S7dToV\">Isaac Rousso won\u2019t share where he\u2019s getting that amazing bacon or what exactly prompted this incredible idea. He did let it slip that he was thinking about the fair staple, <a href=\"https:\/\/fletcherscornydogs.com\/\">Fletcher\u2019s corny dogs<\/a>, and wanted to make a comparable food that would advertise itself and become just as iconic.<\/p>\n<p id=\"oxDzlF\"><em>The verdict: A<\/em><\/p>\n<p id=\"LbLlzl\">The bacon is so good that Qui\u00f1ones-Pittman spent a lot of time trying to convince Rousso to give up his source so she can serve it in her restaurant. The photo of her face when she saw the bacon go into the cotton candy machine says it all. This <a href=\"https:\/\/dallas.eater.com\/2024\/8\/22\/24226220\/texas-state-fair-2024-food-winners\">Best Taste \u2014 Sweet winner<\/a> seems to be a bite everyone has already heard about and wants to try. Qui\u00f1ones-Pittman says it\u2019s a hit.<\/p>\n<h2 id=\"kUdrtH\"><strong>Texas Sugar Rush Pickles<\/strong><\/h2>\n<p id=\"Bl7VIB\"><em>The inspiration<\/em><\/p>\n<p id=\"AJjVDj\">When Qui\u00f1ones-Pittman walked up to this booth, she looked at <a href=\"https:\/\/www.facebook.com\/deliciouscandypicklesfactory\/\">Candy Pickle Factory<\/a> owner Heather Perkins for a minute and then placed her. \u201cHave I seen you on TikTok?\u201d Yeah, Perkins said, laughing. Her out-there <a href=\"https:\/\/www.tiktok.com\/@deliciouscandypickles?lang=en\">pickle creations are a viral sensation<\/a>. It may have started with the chamoy pickle, but it won\u2019t end until Perkins says stop.<\/p>\n<p id=\"MjI2fB\"><em>The verdict: A-<\/em><\/p>\n<p id=\"7qOyxt\">After Perkins laid out all the ingredients for this dish, Qui\u00f1ones-Pittman\u2019s face grew incredulous. Upon trying it, she was a fan. Qui\u00f1ones-Pittman remarked in cheffy style about how the textures play against each other, and then made Perkins\u2019 sons come out to explain their inspirations. It turns out, Candy Crush and <em>Wreck-It Ralph<\/em> are their sources. Looks like they deserved the Most Creative award they landed for it.<\/p>\n<h2 id=\"vtfVSS\"><strong>Dominican Fritura Dog<\/strong><\/h2>\n<p id=\"TJPsmR\"><em>The inspiration<\/em><\/p>\n<p id=\"KeTHmG\">Justin Martinez and Michael Tavarez dreamed up this wannabe corn dog\/hot dog mash-up that took Best Taste \u2014 Savory in the awards. It is stuffed with fritura cheese and Dominican salami and coated with a secret sauce.<\/p>\n<p id=\"J6pU3B\"><em>The verdict: A-<\/em><\/p>\n<p id=\"94HmeA\">It was the first savory bite that Qui\u00f1ones-Pittman had on our day at the fair, and she felt it was clear why this won. They still refused to tell us what is in the secret sauce.<\/p>\n<h2 id=\"JTc1TC\"><strong>Tropical Two-Step Punch<\/strong><\/h2>\n<p id=\"euRu8T\"><em>The inspiration<\/em><\/p>\n<p id=\"UUSz5K\">Honestly? The inspiration for this was the desire to get drunk at the fair. And Vietnamese fruit punches.<\/p>\n<p id=\"pepCnm\"><em>The verdict: B-<\/em><\/p>\n<p id=\"IlGpVy\">Qui\u00f1ones-Pittman watched as Binh Tran lined the glass with hot sauce and added a mixture of citrus and mango juices. That\u2019s it, that\u2019s the whole drink. Fairgoers will have the option to add Fireball, rum, or vodka and Qui\u00f1ones-Pittman recommends rum \u2014 but would love to try it with mezcal.<\/p>\n<h2 id=\"SqTcmY\"><strong>Texas Fried Burnt End Bombs<\/strong><\/h2>\n<p id=\"r5Rpmv\"><em>The inspiration<\/em><\/p>\n<p id=\"PSNy12\">Nick and Vera Bert\u2019s family have been <a href=\"https:\/\/lakewood.advocatemag.com\/a-fair-family\/\">fair concessionaires for over a century<\/a>. The inspo for the dish? Barbecue, beef, and potatoes \u2014 you know, all the Texas favorites. <\/p>\n<p id=\"XbCK1I\"><em>The verdict: B<\/em><\/p>\n<p id=\"QIwSey\">The way they smelled as they cooked was sinful. Qui\u00f1ones-Pittman got giddy waiting to try one. She didn\u2019t hold back on dousing them in barbecue sauce, and neither should you. She declared it the most Texan of all the finalists.<\/p>\n<h2 id=\"0nd1ru\"><strong>Hippie Chips<\/strong><\/h2>\n<p id=\"AQAsBW\"><em>The inspiration<\/em><\/p>\n<p id=\"2QsfA6\">Rose and Tom Deschenes have been developing this recipe for about a decade. There were a lot of chip combinations to try. It\u2019s a deceptively simple dish.<\/p>\n<p id=\"Ir1XZ1\"><em>The verdict: B+<\/em><\/p>\n<p id=\"8RAS5k\">This is the sleeper hit of the finalists. Looking at it, it\u2019s like, <em>Okay here are some wavy chips with baked potato toppings, no big deal<\/em>. Qui\u00f1ones-Pittman discovered that the Deschenes hand-make their ranch dressing to top them, and we all discovered that you will mindlessly eat them until someone takes them away from you.<\/p>\n<h2 id=\"LCXobQ\"><strong>Strawberry Pop-Tarts Beignetffle<\/strong><\/h2>\n<p id=\"8P92Qv\"><em>The inspiration<\/em><\/p>\n<p id=\"U87Ey8\">This is another entry from Justin Martinez and Michael Tavarez, who cited New Orleans food as their jumping off point. The massive Belgium waffles frequently spotted at the fair were also inspiration. The tricky part was figuring out how people could carry this bite around \u2014 it\u2019s pretty top-heavy.<\/p>\n<p id=\"vVhsq0\"><em>The verdict: A<\/em><\/p>\n<p id=\"oIFc8t\">Qui\u00f1ones-Pittman says this is going to replace funnel cakes and waffles for her family. It eliminates the need to share a messy, sticky dish, and comes with a stick. Genius.<\/p>\n<h2 id=\"eeFntZ\"><strong>The Drowning Taquitos<\/strong><\/h2>\n<p id=\"Iy1fns\"><em>The inspiration<\/em><\/p>\n<p id=\"mnXFcF\">Tony and Terry Bednar aren\u2019t trying to reinvent the wheel, they just want to serve a better taquito. Sticking it in a cup loaded up with guacamole, sour cream, and salsa does the trick. <\/p>\n<p id=\"lyQnZm\"><em>The verdict: B+<\/em><\/p>\n<p id=\"UcG3cK\">Qui\u00f1ones-Pittman could not stop raving about the avocado salsa in this dish. The Bednars noted that it is too spicy for some people. It is not. Just get it.<\/p>\n<h2 id=\"HPIdf8\"><strong>Nevins Nutty Bar-laska<\/strong><\/h2>\n<p id=\"CnP5Ov\"><em>The inspiration<\/em><\/p>\n<p id=\"lrod8t\">The Nevins family are <a href=\"https:\/\/www.dallasobserver.com\/restaurants\/vendors-nevins-75-year-state-fair-of-texas-routine-20595550#:~:text=The%20Nevins%20family%20opened%20a,long%20before%20child%20labor%20laws.\">75-year-old legacy fair stand concessioners<\/a>. This sweet treat was the brainchild of Josie Mayes, the youngest Nevins, who got the idea at a campfire one night while making s\u2019mores. <\/p>\n<p id=\"MgUbA0\"><em>The verdict: B<\/em><\/p>\n<p id=\"vQqwaE\">Qui\u00f1ones-Pittman watched the layers and layers go onto this desert and snorted when Mayes told her the freeze dried strawberry chips on top pull it together. Then she took a bite, and it turns out they really do.
